My mother and I love a good squash recipe. How to make it goes back and forth depending on which one of us cook it. This is my version of her recipe (more cheese and mayo).
Donna’s Squash Casserole
5-6 Yellow squash, sliced
1 Onion, chopped
1/3 cup mayonnaise
¼ cup reserved squash boiling liquid
2 cup shredded sharp cheddar cheese
Ritz Crackers
350°. Cook the squash and onions in enough salted water to cover them and boil until the squash is tender. Drain, (reserving ¼ C liquid), mash and add the mayo, reserved liquid and cheese. Top with crumbled crackers and bake for 25-30 minutes.
