1 cup butter, softened
1 cup brown sugar
1 cup sugar
2 eggs
1 tablespoon vanilla
1teaspoon salt
1 tsp cornstarch*
1 tsp baking soda*
2 1/2 cups oatmeal
lots of chocolate chips
Cream butter and sugars. Add every thing other than flour and oatmeal. blend well. Mix in flour and oatmeal gradually. Stir in Chocolate Chips. Chill in fridge (a half hour is fine, but overnight is good too).
Preheat oven to 375 deg F. On greased or non-stick pan, roll ping pong ball sized cookies. Sometimes I (Nikki) get impatient and make them bigger. It works too as long as you're consistant.
Take out of the oven just before they're 'done' (don't wait for them to brown. Will look slightly undercooked, but not gooey. Chris says ~7 mins) and put on cooling rack or dish towel. They will be just chewy enough when they cool.

*(originally these were together 2 tsp of baking powder, but i ran out last time and we tried these two ingredients instead, and the cookies were the best ever. we don't know if it will happen again, but that's gotta be the only explaination for super-awesomeness, since it was the only thing different!)
